I spent quite a while Saturday morning preparing greens and salad for a week. I really tried to remember various tips that I've learned from all of you. Here's what I did:
I washed everything then I let it dry for a bit; blotting with paper towels just to be sure.
I cut up collards and texas mustard greens, and put them together in a container. I cut up dandelions and put them in a container alone (so they don't contaminate the rest of the greens if they don't survive). Then I cut up turnip greens and put them in a separate container (not familiar enough with them to know how well they keep).
Then I got out the salad shooter. I shredded yams, parsnips, green beans, and snow peas and mixed them together in a large container. Then I shredded yellow crook neck squash and butternut squash and put them in a separate container.
It took me quite a while because it was my first time doing it this way. I have no idea if I've make way more than will keep, but it's a learning process.
Here's a very funny result of my morning with the veggies. I had a dream the night after I did all this... I had gotten into a car wreck, and my parents drove by and they picked me up. Their car was very odd. It looked normal enough on the outside, but when I got in, it was like the vegetable drawer in my fridge! Plus they had friends with them, so we were all packed into this little vegetable drawer and it was very uncomfortable.
<OK, Dominick... go easy on your analysis > I just love weird dreams!
But it was SO worth it... it was so easy this morning just to grab the containers and just dish out food!
