I was wondering what the latin names (or dutch  are for collard greens, turnip greens and mustard. I don't think we have them in our grocery stores, bur maybe I can get some seeds and put them in my garden. Thanks

turnip green - groene raap mustard green - groene mosterd collard green (spring green) - groene de lente water cress - water tuinkers parsnips - pastinaken This is what I got using Babel Fish - babelfish.altavista.com/

Thanks for looking it up, I still have a few questions.. As for the turnip greens, groene raap does not excist but it's probably (knol)raap what we have here Brassica rapa. Am I correct? I looked it up in wikipedia.
For mustard I found a few mustard species for example Brassica nigra which is called black mustard it is related to the cabbage family and there is Sinapis alba which is a yellow flowering musard but a whole different family.. Wikipedia says in english it is called white mustard. Do you know which of the two it is?
For the collard greens are those the leaves of the cauliflower? (we have no lente de groen..)

No...those aren't the leaves of cauliflower. Since scientific names are the same in every language - that's a good way to I.D. them. Let's try again...  mustard greens - Brassica junceacollard greens - Brassica oleraceaerape - Brassica napus <---another good one turnip greens - Brassica rapa <---you had that right dandelion greens - Taraxacum officinale <---Excellent source, too For pictures on what many of these look like - here's a link for comparison: www.greenigsociety.org/foodchart.htm

thanks that helped a lot. I have never seen the collard greens here, but I'll try to find some seeds, the rest will not so hard to find here. Friday he's getting his first parsnips

I see now that the collard, mustard and turnips are all family of the brassica family. Do I have to worry for the goitrogens in them as they have an effect on the thyroid function and depress the uptake of iodine?

Goitrogens aren't much of a problem in those 3 species of Brassica.
